My family loves pasta and the flavors of the Mediterranean. What makes this dish popular with me, besides the fact that it’s easy, healthy and tasty, is that with the addition of leftover chopped up chicken, turkey or grilled salmon, it becomes a one-pot meal!

8 oz bowtie noodles, cooked as directed (double if serving as a main dish)

2 tbsp olive oil (preferably from the jar of sun-dried tomatoes)

6–10 sun-dried tomato halves, chopped

2 tbsp capers, drained

1 tsp, heaping-minced garlic

½ C crumbled feta cheese

2 tbsp toasted pine nuts

while pasta is cooking, gently warm olive oil, tomatoes, garlic and capers (if making this into a main dish, warm chicken/turkey/fish with this mixture). When pasta has been drained thoroughly, stir in tomato mixture. Pour onto heated platter and top with feta and toasted pine nuts. Enjoy!

To further stretch this dish, stir in a pound of triple washed baby spinach. It will wilt as it is combined with the rest of the ingredients. Serve with garlic toast.
